feat: implement /stats and /categories endpoints

- Add /stats endpoint with StatsResponse (items and categories count)
- Add /categories endpoints (list, create, delete)
- Create Category model and schema
- Add Category migration
- Support trailing-slash aliases for /stats and /categories
- Ensure DELETE /categories/{id} returns 204 with empty body
